Grapes: Grenache 70%, Carignan 30%.
Winemaking: Fermentation halted with grape spirit to retain natural sweetness; macerated 30 days; light filtration; 15 months French oak (50% new).
Tasting: Dark and concentrated with ripe plum, cassis and dark cherry. Toast, coffee and mocha complexity; lively acidity and soft tannins.
Dietary: Vegetarian and vegan.
Pairing: Bitter chocolate and mature cheeses.
